I make this all the time: for a regular weeknight dinner or to impress family when they come over. It's delicious, satiating and so flavorful and completely vegan!
Side note: Purple Carrot has completely changed our vegan food game. Every meal is creative and knocks it out of the park and can be ready in 45 minutes or less.
I know - vegetarian burgers cause me to roll my eyes, too, but I would eat this over a regular burger every day. So many veggie burgers taste like bean mush or ruin themselves trying to be meat. This one gives you the rich flavors of beet and quinoa, but with a smoky, well-textured bite that had us running out to make it again. It's summertime!
I swear this is my last one... but I forgot that this is like my favorite thing to make. It has all my favorite flavors from Indian food in a sort of crispy taco format. I love making this one.
- Buy tempeh (found in plant-based section in produce isle)
- Cut Tempeh into 1/4" slices
- Cook on high heat with olive oil and soy sauce
- Season (I used salt, pepper, and paprika)
- Kale, cabbage, bean sprouts, cranberries, pumpkin seeds
- I used a sesame ginger dressing
There's a lot going on in this salad -- definitely refreshing and delicious! Does pair well with the "2019 So This Happened White Blend" which is part of how I got the recommendation. (How millennial of me.)
