Super simple and yummy soy sesame tofu with side salad of: cucumbers, avocado, pumpkin seeds, red onions & celery. Seasoned with salt, pepper, campari tomatoes, and lime juice (2.5 limes to be exact - but it's because I love lime)
Ideally do the gnocchi briefly grilled with melted butter and sage prior to the bake, so the gnocchi has that toasted flavour, and add grated zucchini. If you want a bit of a pick me up, give it some added chilli. jessica.day1 thought this was yummO!
Awesome meatless version of tuna (or egg) salad sandwiches. See tweaks below for how to make it vegan and with a bit more kick.
Chicken adobo, the national dish of the Philippines, is made by braising chicken in a salty, sour and sweet mixture of mostly soy sauce and vinegar. I make this all the time: for a regular weeknight dinner or to impress family when they come over. It's delicious, satiating and so flavorful and completely vegan!
Side note: Purple Carrot has completely changed our vegan food game. Every meal is creative and knocks it out of the park and can be ready in 45 minutes or less.

- Buy tempeh (found in plant-based section in produce isle)
- Cut Tempeh into 1/4" slices
- Cook on high heat with olive oil and soy sauce
- Season (I used salt, pepper, and paprika)
- Kale, cabbage, bean sprouts, cranberries, pumpkin seeds
- I used a sesame ginger dressing
There's a lot going on in this salad -- definitely refreshing and delicious! Does pair well with the "2019 So This Happened White Blend" which is part of how I got the recommendation. (How millennial of me.)
haven't made this yet but my sister in law raves about it!
